Pineapple Christmas Balls

Ingredients:

– 398 mL canned crushed pineapple, very well drained
– 8 ounces cream cheese, softened
– 2 cups unsweetened fine desiccated coconut
– 1/2 cup graham crumbs
– 1 packet (3 oz) pineapple jello

Directions:

1. In a large bowl, place the softened cream cheese. Using a mixer can help achieve a smooth consistency.

2. Add the drained pineapple, one cup of coconut, graham crumbs, and the pineapple jello powder to the bowl. No need to prepare the jello beforehand.

3. Thoroughly mix all the ingredients until well combined.

4. Chill the bowl in the fridge for one hour to set.

5. After chilling, scoop out tablespoons of the mixture and shape them into balls. Roll each ball in the remaining coconut for coating.

6. Store the Pineapple Coconut Bliss Balls in a food-safe container in the refrigerator.

Notes:
For a festive touch, consider rolling the balls in colored sprinkles or finely chopped nuts before refrigerating.
